Thanks to the community for the discussion. Raymondjiii's instructions worked perfectly. For those Mac users, like me, who don't remember how to right click that was the one thing I had to look up (Control key and mouse click)! Thanks again.

I think the latest Ventura update (13.1) I downloaded today fixed the problem! Before I had to change it to "PDF-Searchable", but I went back in to HP Easy Scan Preferences to change the Output Type back to "PDF", and the pdf scans are no longer blank when you open them! So I think the latest Ventura update finally fixed everything. Didn't have to download any new HP Easy Scan, just used the one in the Mac App Store (1.10.0) and it worked fine. So now I can scan from the scanner touchscreen itself, not having to use PDF-Searchable but just PDF, and don't have to use HP Easy Scan or HP App at all, just the touchscreen on the scanner itself.

I had the same experience - didn‘t change to Easy Scan 2.0, but obviously Ventura 13.1 came up w/ a solution. Everything works fine now, no blank pages anymore!
p.s.: is there another reason, why I should change to Easy Scan 2.0? Any design changes, functionalities?

Hi Jrandman... thanks for your solution... it worked!!! It allowed me to scan to computer as before the OS upgrade, producing a multiple-page, non-blank PDF doc. Using the EasyScan method was not an option for me as my printer is upstairs so going up and down to replace multiple pages on the scanner is a non-starter. Thanks so much!

As far as I can see, the latest version of Easy Scan is 1.10. Which is what I already have. The update 3.0.1 to Ventura caused the problem as described i.e. scanned pages not showing content when saved to Mac folders. However, the patch in update 3.1 to Ventura released 14.12.22 cures the problem entirely. Available now via your system updates.
