Try VueScan app from from www.hamrick.com
it works in Sierra, finds your scanner in no time,
try the free version first that puts a watermark on the scan,
then register if you like it. Standard $50 pro $90
OR
Hope you can see my image. Open the printer dialog box, click settings, click web interface. Operate your scanner from here. Good Luck.

Hi, I am having similar problems with an HP C6180, it used to work with El Capitan, but no longer works with Sierra.
I have tried deleting the Library items for HP as described and restarted Mac & Printer.
My printer is connected directly to the mac using a network cable, the mac connects to the internet via WiFi.
I can print but HP Easy scan software says there is no scanner or it is turned off.
I downloaded Vuescan and it scans immediately, so it must be that HP Easy scan doesn't work or requires some configuration.
To be honest the old HP scanning software with Snow Leopard etc was always very slow to wake the scanner, often saying Scanner is warming up for about a minute, whereas Vuescan would always initiate a scan immediately.
HP make very good printers & scanners but have always left a lot to be desired in the software department.
I sugest anyone else having problems downloads Vuescan, the trial is free, because it verifies that the printer / scanner is connected & functional, then hopefully HP will fix the software.

I'm running macOS Sierra 10.12.1, and my printer is a quite old "HP Photosmart C3180 All In One", so depending on your printer your results may differ.
Let me just start with the bottom line: scanning is working for me, but not when using the hp utility, "HP Scan". If I scan using "HP Scan" it seems to work, but when I save the file created and then open the saved file, Preview displays a completely distorted image, barely resembling the original scan.
Here's what does work. I open System Preferences>Printers and Scanners, click on the "Scan" tab near top of page, then click on "Open Scanner". That brings up a window titled, "Scanner". When this window opens it displays "scanner warming up" for a few seconds in the left half of the page, then performs a scan. The right side of this page will then allow you to set various parameters (resolution, paper size, where the scanned file is saved, format, etc., etc.). After you've set the parameters you want, hit the "Scan" button, lower right, to perform the operation.
In a few posts above this one "Wine Lover" mentioned, "Scan isn't as good a quality but better than nothing". To get good quality, make sure you have "Resolution" set appropriately in that box, right side of the "Scanner" window. The resolution was set to 85 dpi as a default initially and the result did not look good. I bumped it up to 200 dpi and the result was much better.
Initially I found my scanned file stored is in the folder, "Pictures". You can change where the file goes in the "Scan To" choice on the right side of the Scanner window.
Also, when using PDF format for scanning, you can scan multiple page documents into a single document by checking the "Combine into single document" box under "Format" when PDF format is chosen. I've tried this and it also works.

That doesn't work for me because the scanning window doesn't display "Scanner warming up" or anything at all, and all the buttons are grey.
That was before deleting and reloading the printer, as well as resetting the pringting system and restarting the computer and printer. After all that, there is no Scan button at all.
The only partial solution I've found is, as Martinell suggested above, to go to the HP site and choose webscan. Preview works there. Scan doesn't, but I can drag the preview to my desktop, so I at least have something.
