I contacted my local MAC guru who suggested thea following workaround that worked for me! Its basic scanning but at least it works.
Go to the Applications folder> Open Image Capture>On the left panel you will see Devices and Shared> Under Shared you will see the HP Officejet Pro 8610 listed> Click on this> Insert a single sheet to be scanned in the top feeder of your printer> on the bottom of the main window on the screen you can set Location> Size>Tick Use Document>Click on Scan.

not able to scan with hp envy and mac os Sierra
installed latest drivers
installed easy scan
apple image capture doesnt do it either
uninstalled /re connected to router turned everything on and off several times
can scan using webscan but scan to computer will not enable can do everything on windows machine but want to use mac
fed up
can anyone help please

Thanks Brandon on posting this problem. I live in The Netherlands. A friend of mine had the same issue with her HP Envy 114 printer/scanner. The solution that HP provided to you with downloading HP Easy Scan solved it. Cheers, Nina

I was really looking for a solution to the issue. As many have pointed out, what answered my question here was a temporary fix, or workaround. What really needs to happen is for HP to develop updated drivers, but until then, my office didn't have to shut down for lack of being able to save scans.

I finally talked to a very nice Apple rep, Tohnya Lenartowicz located in Colorado. Turns out she was chasing down problems with Time Machine not working after installing Sierra. However, I explained in full the problems of the "Scan To Computer" feature of many of HP's all-in-one Printers. She took all of the information and said she would pass it on to the programmers. Do not know if a fix will be included in any updates to Sierra. She did not give me a case number.
I understand that the Apple OS includes drivers for printers and therefore HP thinks that drivers from HP should not be necessary. We may be caught in a "Catch 22" in that HP may feel that Apple should fix and Apple may feel that it is up to HP to fix the problem.
Keep the blogs coming and maybe HP will take notice and fix the problem. Alternately, keep calling Apple about the problem.

Nothing that I've been able to read indicates that any are forthcoming. When I was participating in the Sierra Beta testing, it was one of the things that I sent in as a problem. *shrugs* So, I just don't know.
